- 1 1/2 pound (0.6 kg) yellow baby potatoes
- garlic pesto
- 3 tbsp. olive oil
- table salt
- freshly ground black pepper
- Bring a small saucepan of water to a boil. Boil the potatoes for 15 minutes. Drain and set aside to cool.
- Preparing the Garlic Pesto: Preheat oven to 400 degrees Fahrenheit (207 degrees Celsius).
- Slowly transfer the potatoes to a baking sheet lined with parchment paper. Arrange the potatoes on the baking sheet in a single layer. Using the bottom of a small saucepan, gently smash and flatten the potatoes. Season the potatoes with salt and pepper after brushing with olive oil.
