Ingredients:
- 16 oz whole wheat rotini or macaroni
- 1 red onion, diced
- 1 cup diced green onion
- 1 cup chopped dill
- 1 cup chopped parsley
- 1 cup diced cherry tomatoes
- 1 yellow bell pepper, diced
- ½ cup chopped olives or pickled veggies
- ¼ cup crushed walnuts
High Protein Creamy Dressing
- 1 package of extra firm tofu
- 1 clove of garlic
- 2 lemons, juiced
- 1 tsp of salt
- 1 tsp of pepper
- 2 tbsp of olive oil
- ½ cup of fresh herbs
- 1 tbsp of nutritional yeast
- 3 tbsp of water
- 1 tsp of onion powder
Instructions:
- To make the dressing, blend all ingredients in a blender until the mixture is smooth.
- Try it out, then tweak the seasonings and pH to your liking.
