Creamy Vegan Pasta Salad

I really like pasta, and pasta salad is one of my go-to foods. The key is to include some healthy vegetables and a fantastic, tasty dressing.

My latest food fetish is this creamy vegan spaghetti salad. The texture is to die for, and it comes with a luscious, high-protein sauce and vibrant, fresh vegetables.

Ingredients:

  • 16 oz whole wheat rotini or macaroni
  • 1 red onion, diced
  • 1 cup diced green onion
  • 1 cup chopped dill
  • 1 cup chopped parsley
  • 1 cup diced cherry tomatoes
  • 1 yellow bell pepper, diced
  • ½ cup chopped olives or pickled veggies
  • ¼ cup crushed walnuts

High Protein Creamy Dressing

  • 1 package of extra firm tofu
  • 1 clove of garlic
  • 2 lemons, juiced
  • 1 tsp of salt
  • 1 tsp of pepper
  • 2 tbsp of olive oil
  • ½ cup of fresh herbs
  • 1 tbsp of nutritional yeast
  • 3 tbsp of water
  • 1 tsp of onion powder

Instructions:

  1. To make the dressing, blend all ingredients in a blender until the mixture is smooth.
  2. Try it out, then tweak the seasonings and pH to your liking.
  3. Put everything for the salad into a big bowl. Toss the salad after pouring the dressing over it. Once constructed, this keeps beautifully in the refrigerator for up to four days.
