Summer is nearly over, and I have two more dishes to share with you. Lemongrass beef skewers are one of my favorite dishes.
Every food item tastes better when skewered and cooked over an open flame.

Garlic, shallots, and fish sauce are used to flavor these beef skewers with Vietnamese flair.
Using these components in your meat marinade ensures that your meat will be infused with a distinct flavor.
When the meat is cooked over an open flame, it will become charred and flavorful.
Crushed peanuts and sautéed scallions (green onions) were the traditional garnishes for these lemongrass beef skewers because you know how dark grilled meat can be.
You don’t really need a dipping sauce for the beef skewer because it’s so flavorful on its own.

INGREDIENTS
- 22 wooden skewers
- 1.5 pounds top sirloin steak
MARINADE:
- 1/2 teaspoons freshly ground black pepper
- 3 tablespoons fish sauce
- 1/4 teaspoon salt
- 1 1/2 tablespoons sesame oil
- 2 tablespoons minced garlic
- 1/3 cup diced fresh lemongrass, white part only
- 1/4 cup minced shallot
- 3 tablespoons sugar
- 2 tablespoons sweet soy sauce
GARNISH:
- 1/4 cup slightly sautéed scallion
- 1/4 cup roasted peanut, crushed
INSTRUCTIONS
- Chop the meat into thin slices no more significant than 3/4″ square and thicker than 1/4″.
- The Marinade can be made by combining all of the marinade components. Mix in the Marinade thoroughly with the meat. Allow at least 1-2 hours of marinating time.
- Allow the wooden skewers to soak in water for at least 30 minutes before using. Use the wooden skewers to thread the meat through.
- Prepare the grill for 2 to 3 minutes per side or until doneness is achieved by grilling the meat over medium-high heat.
- Crushed peanuts and onion bits can be added to Lemongrass Beef Skewers before serving.
NOTES
- Stir-fry the scallion in 2 teaspoons of cooking oil in a nonstick pan over medium-high heat. Toss in the 1/4 cut scallions as soon as the oil is hot enough. Salt to your preference. 1 minute of gentle sautéing.
