The best part about this chili lime corn dish is that it can be made any time of year. Cook in the oven or using a grill pan indoors.

  • 400 g of peeled and deveined shrimp with tail on

  • 2 cloves of finely chopped garlic
  • 2 tablespoons of Thai sweet chili sauce
  • 2 tablespoons of olive oil
  • 1 tablespoon of finely chopped cilantro/parsley leaves
  • 1 pinch of salt
  • ½ tablespoon of honey
  • ¼ cup of fresh lime juice

  1. Coldwater should be used to soak the bamboo skewers. Pat the shrimp dry after rinsing in cold water using paper towels. Set aside for later.
  2. Place the ingredients needed for the marinade in a large bowl and mix them.
  3. Carefully coat the shrimp evenly in the marinade before serving. Allow it to marinate for 30 minutes.
  4. Heat up a grill to medium-high and cook the shrimp until they are pink and slightly charred all over. Serve right away.

Alternatively, you can bake the shrimp in the oven at 400F for 10 minutes. To brown the shrimp on the outside, place them under the broiler for one minute after being baked.
