Whip Up Quick: Flavorful Broccoli & Tofu Rice Bowls

The joy of preparing a swift yet tasty meal like broccoli & tofu rice bowls is unparalleled. After days of indulging in costly salads, I decided to craft these savory bowls for work lunches. This cooking endeavor not only introduced new flavors but also solidified a pact with a colleague: we each become the other’s chef for two days weekly.

Her Persian heritage graces us with vibrant stews, salads, and unique egg dishes. In return, I embrace my cherished Chinese culinary traditions. Among our favorites, the Broccoli Tofu Bowl reigns supreme, making its appearance multiple times, much to our shared delight (because who can resist tofu’s charm?).

With its fuss-free nature, this dish caters to all, be it vegetarians, vegans, or those who relish everything. Paired with either pristine white or wholesome brown rice, it’s a luncheon dream. The best part? It’s ready in just 10 minutes! Half the time is spent prepping ingredients and crafting a savory sauce, while the other half is all about stirring magic on the stove. If tofu has been a mystery to you, this dish unveils its wonders.

Ingredients:

  • 16 oz. firm tofu (450g)
  • 1 cup either chicken or vegetable broth (235 ml)
  • 2 tablespoons soy sauce
  • 1 teaspoon dark soy sauce
  • 2 tablespoons Shaoxing wine (or substitute with dry sherry cooking wine)
  • 1 teaspoon sesame oil
  • ½ teaspoon sugar
  • 2 tablespoons vegetable oil
  • 2 garlic cloves (minced)
  • 1 pound broccoli (450g, segmented into tiny florets)
  • 1 tablespoon cornstarch (mixed in 2 tablespoons water)

Instructions:

  1. Slice the tofu into palatable cubes. Meanwhile, in a bowl, mix together stock, both soy sauces, wine, sesame oil, and sugar. Keep it at hand.
  2. With medium heat beneath, warm the vegetable oil in a skillet or wok. Toss in the garlic, ensuring it turns golden, not charred. Usher in the broccoli, intensify the heat and stir-fry until it adorns a lush green hue.
  3. Introduce the tofu and the previously mixed stock concoction. Gently mix them in. As it begins to simmer, blend in the cornstarch mix, letting it bubble for around 2 minutes till the sauce gets a velvety touch. Pour over your preferred rice and savor!

The beauty of this dish lies not just in its taste but also in its nutrition. Tofu, a soy product, is a great source of protein, particularly for those who avoid meat. It also offers a dose of vital minerals like calcium and magnesium. Broccoli, the green star of this bowl, isn’t just there for the color; it’s packed with vitamins C, K, and fiber, promoting overall health. Combine these with the antioxidants from garlic, and you’ve got yourself a meal that’s both delectable and nourishing. Making choices that serve your palate and body is a form of self-love. Dive into this dish with the knowledge that you’re treating yourself right, one flavorful bite at a time.
