Ingredients

How to Prepare

  1. Start by infusing your oil: in a mortar and pestle, combine garlic and oil. Crush the garlic slightly – the goal here isn’t to form a paste but to let the garlic essence meld with the oil.
  2. Next, place a sauté pan or wok on medium-high heat. Pour in the garlic-oil mixture, ensuring the crushed garlic pieces remain in the mortar to avoid them burning.
  3. Lay the Shishito peppers evenly on the pan, ensuring each one makes contact with the surface. Sear each side until they showcase a lovely golden hue. Regularly toss and turn them until their entire surface is blistered, taking about 6 to 8 minutes in total.
  4. For those who enjoy a deeper char on their peppers, ramp up the heat for the last 30 seconds.
  5. Finish off by seasoning the peppers with a generous pinch of coarse sea salt. Toss them well, place them on a serving dish, and optionally drizzle with balsamic vinegar. A final sprinkle of sea salt, and they’re ready to be devoured!
