Lemongrass is one of my favorite ingredients because I grew up in Southeast Asia. Aromatic lemongrass permeates even the most basic recipes, transforming them into something special.

Lemongrass has been successfully grown in my friend’s garden, and because she knows how much I enjoy it, she made me a big lunch.
On that particular day, I happened to have a few frozen chicken drumsticks, so I decided to bake them in honey lemongrass sauce.

INGREDIENTS
- One lemongrass, top part trimmed off
- 4 garlic, peeled and chopped
- 1 1/2 lbs. chicken drumsticks
Marinade:
- 1 teaspoon sesame oil
- 1 tablespoon honey
- 1/2 tbsp. oyster sauce or fish sauce
- 1 1/2 tablespoons soy sauce
- 3 dashes white pepper
- 1 pinch salt
INSTRUCTIONS
- Lemongrass can be minced using a mortar and pestle. Lemongrass has a beautiful scent, which will help bring out its aromas. For those without a mortar and pestle, you can pound them with the back of a knife.
- After rinsing, use paper towels to pat the chicken dry. Apply a light coating of olive oil to a clean, dry rag and massage it over the chicken. Combine the marinade ingredients with the chicken drumsticks in your large bowl and stir thoroughly. Allow at least 30 minutes, if not many hours, to marinate.
- Make sure your oven is at 375°F (190°C) before you begin cooking. Bake chicken for 40 minutes, or until the outside is golden brown, slightly charred, and cooked inside. Line the chicken with a baking sheet lined with parchment paper. Remove the chicken from the pan, reserve the pan juices, and serve right away.
NOTES
- Before eating, remove any charred lemongrass and garlic from the chicken.
