Mr. Rasa Malaysia enjoys baby back ribs as one of his favorite foods.

Although he enjoys a wide variety of ribs, he particularly likes Chinese-style ribs and BBQ ribs from the US.

When we go out to eat, he doesn’t have a lot of say because I choose the restaurants. But when he does, his response is always the same: ribs.

He’s taken my pals and me to restaurants we’ve never heard of before, where we feasted on ribs from a hole in the wall.

One of his favorite foods is barbecued baby back ribs, and fortunately for us, our friend Slap Yo’ Daddy is a top-notch pitmaster in the United States and would frequently bring us some of his award-winning ribs.

He was served these honey-glazed baby back ribs.

Despite not being a significant fan of ribs, I was pleasantly surprised by this dish’s sticky, gooey, and addictive goodness.

INGREDIENTS

  • 2 tablespoons honey for broiling
  • salt to taste
  • 1 rack baby back rib, halved lengthwise

MARINADE SAUCE:

  • 2 teaspoons molasses
  • 1/4 tsp. garlic powder or 3 minced garlic cloves
  • 1 tablespoon sambal oelek/ Chinese chili-garlic sauce
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 tablespoons coarsely chopped peeled fresh ginger

INSTRUCTIONS

  1. In a bowl, combine the marinade sauce ingredients. Mix thoroughly.
  2. Salt and pepper the baby back ribs to your liking.
  3. Ribs should be marinated for at least eight hours or overnight before cooking.
  4. Preheat your oven up to 325 degrees Fahrenheit or 160 degrees Celsius. Cover the ribs with aluminum foil on a large baking sheet to prevent them drying out. Give a 2-hour roasting time.
  5. Uncover the ribs after they’ve been baking for a while. Apply the honey to the ribs.
  6. At 500°F (260°C), broil the ribs for 5-6 minutes, or until they’re glazed and golden, to your preference.
  7. Individual ribs should be served hot.

NOTES

  • Pork spareribs can be substituted for the baby back ribs if desired.
