INGREDIENTS:

  • Penne or fusili pasta, 12 oz. (340 g)
  • Peeled, deveined, and tail-on 10 oz. (280 g) shrimp
  • 1 tsp seasoning Cajun
  • 1 tsp olive oil
  • 1 tablespoon butter, melted
  • 4 garlic cloves, coarsely minced
  • 2 c. chicken stock
  • 3/4 cup heavy cream
  • Season with salt or season to taste
  • 3 sprinklings of cayenne pepper
  • 1 cup halved cherry tomatoes
  • 2 tablespoons baby spinach
  • 1/4 cup Parmesan cheese, grated
  • Parsley, chopped

INSTRUCTIONS:

  1. 1.  Cook the pasta while following the directions on the package. The shrimp is marinated in Cajun flavor before cooking.
  2. In a medium-sized pan, combine the butter and olive oil and warm through. Add the shrimp after the garlic has been cooking for a few minutes until it has brown. Stir in the chicken stock and heavy cream a few times before serving. Taste and adjust the amount of salt and cayenne pepper as desired.
  3. Toss the pasta thoroughly with the sauce in the pan before serving. Mix the cherry tomatoes and baby spinach until well combined in a medium bowl. As soon as they begin to wilt, turn off the heat. Minced parsley and Parmesan cheese are served right away.
