Preparation Steps

  1. First, heat your oven to 450 degrees. Cut your potatoes into your desired fry shape, lay them on a baking sheet, and toss them with olive oil, Korean chili powder (or paprika if you prefer), and a dash of salt and pepper. Bake these for about 45 minutes, and remember to turn them a couple of times for an even golden-brown finish.
  2. When the fries have been in the oven for about half an hour, begin working on your toppings. Over medium heat, cook your bacon until it’s nice and crisp. Set this aside but keep the pan with the leftover bacon grease. Next, add your chopped kimchi to this bacon grease (or use a tablespoon of oil if you want to keep it vegetarian-friendly), followed by the sliced onion and sugar. Keep this on the heat, stirring until you have a lovely caramelized mixture—around 10 minutes should do the trick.
  3. Once you’re done, take your nearly-baked fries, sprinkle half the cheese over them, then spread the caramelized kimchi mix on top, and finish with the rest of the cheese. Stick it under the broiler for 1-2 minutes until it’s beautifully melted and inviting. Don’t forget to add the scallions and saved bacon. Serve hot and enjoy!
