  • 4 pounds of russet potatoes (peeled and cut into sizeable chunks)
  • 1 to 1½ cups of whole milk (warm; adjust quantity depending on your preference for creaminess)
  • 1 stick of unsalted butter
  • ½ cup of grated parmesan cheese
  • 8 ounces of extra sharp cheddar cheese (grated; add more for a cheesier flavor!)
  • 5 fresh scallions (finely sliced)
  • 1 tablespoon of black pepper
  • 1 teaspoon of salt (or adjust to taste)


  1. Boil the potatoes until they are soft and easily pierced with a fork. Drain them in a colander and transfer back to the pot set over low heat. To ensure your potatoes are served piping hot, warm the milk and melt the butter in a small pot before adding to the potatoes. Alternatively, you can pour the milk directly into the potatoes and add the butter in chunks.
  2. Combine and mash the potatoes, milk, and butter. When the mixture is almost at your preferred consistency, stir in the parmesan and cheddar cheese, pepper, and salt.
