  • 4 oz. of dried wheat noodles
  • A handful of leafy greens (such as choy sum, spinach, or baby bok choy)
  • 1 teaspoon of light soy sauce
  • 1 teaspoon of dark soy sauce
  • 1/2 teaspoon of Chinese black vinegar
  • Crushed red pepper flakes (tailored to your heat preference)

  • 2 1/2 tablespoons of oil


  1. Follow the instructions on the noodle package to cook until they are al dente. Blanch the leafy greens in the same pot until fully cooked, then drain the water.
