You only need to fry a couple of eggs and serve them atop leftover rice (or fresh, if you have an ultra-efficient rice cooker that prepares rice in under 10 minutes. In case you’re wondering, I use a Tiger JNP-1500, but there are various sizes available).

  • 2 scallions
  • 1 tablespoon oil
  • 2 eggs
  • 1 cup cooked white rice
  • 1 tablespoon soy sauce (adjust as per your preference)
  • 2 tablespoons water
  • 1/4 teaspoon sugar
  • 1 teaspoon Shaoxing wine (optional)


  1. Start by cutting the scallions into 2-inch pieces. Take the white part and slice them into halves or quarters lengthwise.
  2. Heat the oil in a non-stick or cast-iron pan over medium-high heat. Cook the eggs to your liking – sunny-side up, over-easy, or any other way you prefer them. Place the cooked eggs on a bed of hot, cooked rice.
  3. Add the scallions to the pan, letting them cook until they start to wilt. Incorporate the soy sauce, water, sugar, and optional Shaoxing wine if you’re using it. Let the mix simmer for 30 seconds, and then pour it over the eggs and rice. Serve immediately and enjoy!
