By prepping the lush melt blend the night before, you streamline the next morning’s assembly. Toast those English muffins, smear on the mixture, bake, and then fry some eggs. This delightful dish truly stands out, far removed from standard cereal mornings.

Having received a delightful batch of soft, airy English muffins from the acclaimed Cobblestone Bread Co., the foundation for this recipe was set. Before the culinary magic began, a taste test was mandatory: toasted muffins met a touch of butter, and the result was sheer joy.

Fun fact? This gastronomic delight was actually a delectable “Second Breakfast” on a lazy Sunday. It’s safe to say, our inner hobbits were more than pleased.


  • Olive oil
  • 1 garlic clove, thinly sliced
  • 2 cups of kale, de-stemmed and finely chopped
  • Salt & freshly ground black pepper
  • 1 cup of grated cheddar cheese
  • 4 oz. of softened cream cheese
  • 4 English muffins, halved and given a light toast
  • 4 prosciutto slices
  • 4 fresh eggs

Steps to Gastronomic Delight:

  1. Warm a few tablespoons of olive oil over medium heat in a skillet, followed by adding the garlic. Sauté for a brief minute, then toss in the finely chopped kale. Season with salt and black pepper, and stir until the kale adopts a tender, wilted demeanor.
  2. Move the perfectly sautéed kale to a mixing bowl, incorporating the cheddar and cream cheese. Blend well. Generously spread this cheese-kale mix on each toasted muffin half. Set your oven to a low broil, letting them get a rich golden hue over 3-4 minutes.
