Brown Butter Cilantro Lime Shrimp Zoodles is the best zoodle dish with huge juicy shrimp sautéed in brown butter, cilantro, and lime juice. It’s fantastic!

This is the perfect dish to prepare if you like zoodles; believe me on this!

Consider brown butter sauteed shrimp with tangy cilantro and lime juice; all served over fresh, crisp zucchini noodles.

You get the concept, and it’s just delectable! Zucchini noodles have recently gained popularity as a healthy alternative to carb-based noodles and pasta.

Everyone likes zucchini, and spiralizing it into noodles transforms it into something truly delicious. My new favorite zoodle dish is brown butter cilantro lime shrimp zoodles.

Again, do not boil the zoodles; they taste much better raw.

The heat from the shrimp will slightly cook the zoodles, giving them the right crispness and fresh texture.

The serving size of this meal is only 420 calories. I offer the following dish for a healthy supper and a quick midweek dinner.

INGREDIENTS:

  • 2 zucchini, 10 oz. (280 g)
  • 1 pound (0.4 kg) peeled and deveined large shrimp with tails
  • a quarter teaspoon of salt to taste
  • 1 tsp. cayenne pepper (2 cm)
  • 3 tablespoons softened unsalted butter
  • 4 garlic cloves, minced
  • 3 tablespoons cilantro, stems and leaves, chopped
  • Lime juice, 2 1/2 tbsp.
  • lime wedges, fresh

INSTRUCTIONS:

  1. Spiralize the zucchinis by cutting 1-inch off both ends and spiralizing the zucchini noodles. To serve, divide the zoodles into two serving dishes.
  2. Add a sprinkle of salt as well as a touch of cayenne pepper to the shrimp and mix well.
  3. In a pan, heat the butter until it turns brown and bubbling, then add the garlic and sauté briefly before adding the shrimp. Cook, constantly stirring, until the shrimp’s surface becomes white. Stir in the cilantro until it is thoroughly combined with the shrimp. Cook the shrimp until the surface begins to slightly browned, then add the lime juice and toss to combine. Toss the zoodles lightly with the Cilantro Lime Shrimp after topping them with the shrimp. Serve immediately with fresh lime wedges as a garnish.
