Chinese fried rice is a traditional Chinese dish found at a variety of Chinese restaurants around the world.

This traditional Chinese fried rice recipe uses Chinese sausage lap Cheong (腊肠), veggies, eggs, overnight rice, and soy sauce.

The components are cooked in a Chinese wok over high heat, with the signature scents from the wok hei (镬气)) or wok breath.

The result is a wonderful and satisfying rice dish that may be served for lunch or dinner.

To begin, make sure you use an electronic rice cooker to prepare your rice. The rice cooked in an electronic rice cooker is soft, fluffy, and precisely steamed. Refrigerate the rice for at least one night.

Heat a wok or skillet over high heat the next day. Stir in the garlic with the cooking oil, then add the Chinese sausage.

Then add the rice and mixed vegetables to the wok. Before adding the soy sauce and pepper, stir and mix all ingredients.

To fry the eggs, push the rice to one side of the wok and add some oil. When the eggs have been set, break them up, combine them with the rice, and toss thoroughly.


  • Freshly steamed rice should not be used since it is too wet and contains too much moisture. Refrigerate the steamed rice for at least an hour.
  • Make sure there are no lumps in the rice. You can break these lumps with a spatula while the rice is cooking or separate it before cooking.
  • The secret to the best results is wok hei, or wok breath, which comes from a very hot Chinese wok. A skillet or pan on high heat will suffice if you don’t have a wok.
  • Season with a mixture of soy sauce and oyster sauce or soy sauce and fish sauce for more flavor and umami.

What kind of rice is served in Chinese restaurants?

Use long-grain rice in this recipe for a Chinese restaurant-style outcome. Short grain rice, such as Japanese rice, is not recommended. For fried rice, I recommend Jasmine rice.

Can I use freshly steamed rice?

Before cooking, allow the steamed rice to dry out. To dry out the moisture content, put the rice out at room temperature for an hour.

Make sure you don’t overcook the rice by adding too much water.

Refrigerate the freshly steamed rice overnight for the best results.
